Data rollover. When I'm at home I use hardly any data but I am often away from home in a place with no WiFi and I always need top-up.

Ealasaid I'm pretty sure you're not the only one.
That's the way it is. When Mobile phones first hit the market, use was even more limited.
I use my phones for business and am a fairly heavy user of data, but mostly for calls, search, email, SMS, and IM.
Using the standard 5 pound plan, I have never run out of data.
I generally run out of energy first and need to switch to power pack.
I'm wondering if you might be a heavy gamer?
In which case it's likely you will use more data P/Month than I.

Perhaps it may be more economical to upgrade to a bigger data plan?
You would need to do the maths - how much in pounds, do you spend in top ups P/month compared with the extra cost of a bigger data plan.
At the end of the day that's your decision.
Every product is built and sold for a certain market and use.
A 50cc Yamaha is fine for a 20 minute ride into the city, but you'd probably need to 998cc Kawasaki if you wanted to go from London to Scotland!
Horses for courses as they say.
      Hope this helps.

Using same number or even a separate number for smart watches as both my wife and I want to be able to use our watches without having to have our phones nearby for bluetooth.

Jamsandy Thats a good point, I have a few apps which I sometimes need to use on a third party computer, but ask me to confirm via phone.
          Which isn't always handy.
I don't use a smart watch but have a feeling that issue may be best laid at the door of the APP or watch maker though?

The smart watches that are lte do have esim installed, it just needs lebara to enable LTE E-SIMS on their systems as they already do. E-sim on phones.

Jamsandy I learn something new every day.
              Isn't the Internet wonderful.
To think, some want to block it~
